Menu Plan Monday 9/16




WOW, I knew it had been a LONG time since posting a Menu Plan(or even doing a menu plan), but I didn't realize it had been since February. The year has FLOWN by and my family and I have been quite BUSY. I am currently trying to get our family back into our old routines and get the time management under control. Menu planning and posting it is just one of the "back to routine" things I need to get back on track with. I get so frustrated when I don't do menu plans weekly, as not only is a "What's for Dinner" daily question, but it also is HARD on the budget.

I am working on not only the budget part of the Menu Plan, but I will be switching up our Homemade Snacks and also adding in "Never tried" recipes. The "Never Tried" recipes I am going to add in about 2 a week and see how the family enjoys them. Soo glad to be back to taking care of the food budget and menu planning.

Menu Plan Monday 2/18



WOW, what a great week we had last week with sticking to our plan and not changing up at the last minute. I have noticed when life plans change so does our menu plan. I purposefully made sure if we had a change of plans last week that we still stuck to our menu plan. Our budget appreciates that "purposefulness"! A new "Trick" I have been doing in the last couple of weeks that is also helping our "budget" is that we have leftovers the next day after making something. If there are still more leftovers from that dish I have been packaging them up to be put in the freezer for use at a later time. We now have about 4 lunch sized meals from the past 2 weeks of doing this. I know this will certainly help the budget in the long run. We can "Raid the freezer" for last minute dinners or change in plans instead of running to fast food!

 I got a little busy last week so I didn't get around to tweaking our snacks and some of our meals. I have some ideas that I found on Pinterest and Stumbleupon that I am going to be implenting!

Menu Plan Monday 2/11



I am so glad I am back to doing Menu Plans for our family once again. The food budget and my insanity are so much more in order. I cleaned out our chest freezer today and have a good inventory of what I have and what I need. I look forward to doing a good stock up soon, when we get our tax refund.

I am going to be tweaking our snacks and some of our meals during this next week and I look forward to trying new things in the coming month or so!

Menu Plan Monday 1/28


I am very glad to say that we had a good week "Getting back to the routine" of following a menu plan. We did have a last minute change of plans for Saturday, so I am "recyclying" last Saturday's menu plans to this coming Saturday. I hadn't purchased the ingredients yet when plans changed, so nothing wasted.

My husband and I did some Freezer Cooking and baking last weekend while he had a 3 day weekend. My favorite item from last weekend was this Amazing Amish Cinnamon Bread. My husband even enjoyed it and he normally doesn't like quick breads. I really thought it tasted like Amish Bread but without having to use the 10 day starter. The recipe is for sure a KEEPER for our family!

Menu Plan Monday 1/21


PHEW!! I had quite the year last year as I was helping my parents a lot and did a ton of driving last year. My parents are better and my dad now has ParaTransit service back and forth to dialysis. I am getting our family “Back into Routine” and getting our lives better organized. Menu Planning again is just one step of getting back to routine. I am so glad to be doing this again!

Menu Plan Monday 11/26


Praising God for such a wonderful Thanksgiving Weekend! The ENTIRE family was all present for the first time in 16yrs and it was AMAZING!! Had a wonderful feast prepared by my sister and had fun "hanging out"! My family was also blessed with a Pre-cooked meal from a local grocery by a small group from our church. I also went out on Thanksgiving Day and purchased a 15lb Turkey to put in our freezer for cooking at a later time. I paid $8.78 after the sale price! I do hope to catch another sale during the next month and hopefully get a couple more.

God's Blessing= Stocked Freezer




We have been extremely blessed over the past month with being able to stock our freezer with food, especially vegetables! A couple of friends from our Homeschool Group blessed us with a HUGE bounty of Veggies. I was able to bless some family and friends with some and we kept some for ourselves.

A couple of days after receiving the bounty I spent the afternoon to chop and freezer bag the Broccoli and Cauliflower. I am ever so grateful for my Chest Freezer and Food Saver as it truly has been helpful in being able to store more food then we used. I don't miss out on sales anymore due to "not having enough space".

I also spent that same afternoon cooking up 7lbs of Dry Pinto Beans that my hubby later mashed into Refried Beans. We LOVE Refried Beans, but we don't like the price nor preservatives in canned Refried Beans. We use Refried Beans weekly so it much more healthier and cost effective to make our own. We were able to get 12 16oz containers and 3 bigger containers from the 7lbs. We are set for at least 3 months.

We also received the blessing of 20 Baked Potatoes from church recently. We help at our church on Wednesday afternoons/evenings to prep for the Wednesday night dinner. The kitchen help tries to freeze any leftovers that can be frozen so that families from the church who are in need of meal(new baby, bereavement, whatever reason) it can be provided. The food that cannot be frozen, the kitchen help divides up amongst us and we take home. I decided to take the potatoes and slice them down the middle. I scooped out the insides and was left with 2 shells and the insides I put in a bowl. We made mashed potatoes with the insides and Potato Skins with the shells. We ended up with 2 different products from the potato blessing!

We still have Squash that we are going to cook up for dinners! I PRAISE God for the blessings that are stocking our freezer and our "tummies"!

God is soo Good! We have been blessed tremendously over the past week with Veggies and other food. Our freezer has a nice stock of "blessings" right now. I also did some monthly grocery shopping in the past week. Here is info on the blessings we received. I will post more info next week on how our freezer got so full.

Menu Plan Monday 10/29



I had a SUPER busy week last week and didn't get around to planning a menu, but we had a good freezer stock, so all was good! I am looking forward to this week as we don't have any appointments and except for Wednesday don't have to go anywhere. We were supposed to have a day filled with Drs. appointments today, but I have to cancel them because my oldest is sick and contagious, so no taking him with me.

I planned for Chicken Quarters for 2 days in a row because today was supposed to be super busy and it made it easier to cook one day and have leftovers. I also have some "repeats" on my menu from a couple weeks ago things came up and we didn't have those yet. I am going to be working on revising our menu choices and getting some new recipes implemented into our menu plan. I am LOVING the comfort food time of the year for now though!

Menu Plan Monday 10/15



WOW, what a week we had last week. I was so extremely busy with family things that I didn't get a chance to get a menu plan done. We were good though and used things we had in the freezer and didn't “bust our budget” as we normally would in a No menu plan week. I am very glad that this week is a much slower week with only 1 Drs. Appointment, and the rest of the week is our normal routine. Menu Plan Monday 10/1


I am so grateful that this week is a slow week for us, we had our one and only appointment today. The rest of the week is regular weekly routine. I won't be able to go grocery shopping until Thursday, so I am using what we have on hand until then. I will be getting our Hot Cocoa Mix made this week as I do the first week in October every year. I make Regular for my family and I make Sugar Free, Fat Free for me. My boys really LOVE the taste of Homemade Hot Cocoa. Both versions taste like "store bought, name brand" and the cost for homemade is WAY cheaper! This weekend is going to be a Hot Cocoa weekend as the temps are only going to reach a high of 50°!
