Homemade Crockpot Yogurt

A few years ago one of the "moms" on my "mommy board" posted a recipe that she uses to make Homemade Yogurt using a slow cooker. I tried it and LOVED it! It is so easy to make and doesn't take a lot your time. The whole process takes about 24hrs, but only about 15 minutes of your time! I used to make it all the time, but had gotten busy with life, that I was just buying tubs from the grocery store. The rising price of groceries, the grocery budget needing tightening. I decided to give it a try again and made some yesterday.

Here is the recipe that my friend typed out on my "mommy message board":

I make it all the time. I literally make a gallon's worth of yogurt almost every 10 days.
Here's what I do:
I use 2% milk and 1 cup of PLAIN Full Fat Yogurt
You need to bring it almost to a boil. However, in my experience, I've many times burned the milk and the milk burns in the pot, and it's a mess. So, I do what my MIL does and put it in the slow cooker and put it on high for like 3 hours. That way the milk does not burn and does not boil and i don't have to sit next to the stove worrying that it will.
I take the hot milk and let it cool to 118 degrees. In order to make yogurt, you need a culture and so the first time you do it, you need to buy plain full fat yogurt.
When the milk is at 118 degrees, stir in the yogurt into the hot milk. I put the warm milk/culture mixture into the oven and away from drafts (but the oven isn't on). I let it stay there for like 7 hours.

After 7 hours, I put a clean towel over the yogurt to absorb some of the water out and put it in the frig (towel in there) for several hours. I like my yogurt almost cheeselike since I add grated cucumber, dill, green onions, etc and if the yogurt isn't drained well, my yogurt with dill is too watery. I sometimes drain it with 2 changes of towels.

It sounds very time consuming but I have a system. I start the slow cooker at 9 am and let the milk cook in there for 3 hours. At around 1 pm the milk is cooled to around 118 degrees. I add the culture and stick it in the oven and let it do it's thing until 8:30 pm. At 8:30 pm I take it out of the oven and put a towel on the yogurt and when I wake up in the morning, I take the towel off. I always reserve around 2 cups of yogurt for my next batch of fresh yogurt.
Once you've had homemade yogurt, you'll never go back to store bought! I can't stand the taste of store bought yogurt.

It is a really yummy recipe and so easy to do.  The longer you let the towels soak up the liquid, the thicker the yogurt will be. I usually soak up the liquid for about 12-14hrs.

We add granola, smashed fruit, maple syrup and other flavorings before eating. Also, you can add a few teaspoons of vanilla during the process of stirring in the starter yogurt for vanilla flavored yogurt.

I really like the cost factor and being able to get a gallon's worth of yogurt for about $3.50. I buy the milk at Aldi's $2.59 and then the "starters" about .40¢ each. A 32oz tub of yogurt is usually about $3.50!

ENJOY!

Friday Night Pizza Night

My favorite day of the week is Friday night!! Good family shows are on and it is Friday Night Pizza Night in our house!

Our Family has a tradition of making Pizza every Friday night. The boys get upset if we don't have our traditional Friday night Pizza Night. We make this as "meals for families" also because it is something different from the 'casseroles and meals" normally given. Last summer DH decided to take pics as he was going along making the pizza. I put together a slideshow of those pics. (the pics were taken with a cell phone, so not too clear)

We have been making Pizza on Friday nights for 3 yrs now. We have tried many different Italian Sausages, different sauces and cheeses and  we finally found the "perfect recipe" about a year ago!!

We begin by making our dough in the bread machine using this recipe: Bread Machine Pizza Dough The only change is we had some fresh garlic using a garlic press. It tastes so awesome and acts as a dough enhancer. We double the recipe so we can make 2 pizzas.

The other list of ingredients include:
Italian Sausage from Super Tony's (I stock up when it is on sale for $1.99/lb)
Ragu Pizza Sauce (we buy a can for $3.89 at Sam's Club and it last 6 weeks)
3 bricks of Mozzarella Cheese from Aldi's ($1.79 per brick it melts the best and tastes great. tried many other cheeses and this is the best)
Pepperoni from Aldi's $1.99.

I begin the Pizza Dough each Friday and then DH does the rest! Here are the pics of our Pizza Making:

Homemade Fruit Smoothies

Fruit Smoothies are a favorite here in our household. We usually have them for breakfast at least once a week and for snacks a couple times a week.

I buy a 5lb bag of Frozen Strawberries and  from either Sam's Club or Costco once a month. I purchase Mixed Berries and Mixed Frozen Fruit in smaller bags from Aldi's about once a month. We had been stuck in a rut of just Strawberry Smoothies until I came up with an idea about 18 months ago for freezing our own fruit. I personally like bananas for smoothies, but no one really sells Frozen Sliced Bananas anywhere. I purchased a couple bunches of bananas from the produce store and peeled, sliced and bagged them. We froze them and used some in smoothies the next day and it worked wonderfully that we have been doing this every since. I really like the "Frothy" ness of frozen bananas, they are much more creamier then regular bananas. I also like the added benefit of not having to use ice in our smoothies. The Frozen fruit is your "ice".

A couple months ago, Nathan(7yr) began asking me if we could make orange smoothies. I finally got around to buying oranges this past week when I found them on sale for .39¢/lb.

I purchased 9 oranges. I peeled and sectioned them and put them in quart sized bags. We froze them for a couple of days. Today we made some orange smoothies and  !!! They are ohhh so good! We are going to try Strawberry Orange and other varieties using orange very soon!

A friend of mine shared with a fabulous link for tons of smoothies recipes: Smoothie Web. I really like Smoothie Web because there are so many different recipes for smoothies and they are all categorized very nicely! I am going to start sneaking in Flax Seed into our smoothies for added nutrition!

A few weeks ago while at Bed, Bath, and Beyond  I came across something that every household should have . I found a 50ct. bag of Milkshake Straws for $1.99. I like the fact that they are thick and round and also reusable!

Homemade Fruit Smoothies are one of our favorite things. I am so thankful to my 7yr old for thinking about Orange smoothies and that I was able to freeze the ones we purchase at the Produce store!

My Favorite Recipe Sites and Tools

I wrote this recently on my Xanga Blog before I switched to here. I mentioned the other day on here how menu planning is important to my family, so I thought I would repost this blog post here also!

A couple years ago I really tried to weed out as much "convenience food" from our household as possible. I began making menu plans that included a lot of home cooked meals. I try to make as much of our meals, snacks and other things from scratch as possible. I have since found a few recipe sites that I utilize for planning our menus and snacks.

My #1 favorite site is Food.com(formerly RecipeZaar) . It is the first site I go to when looking for recipes to change up our menu or for specific recipes that I have in mind. I really like the "Cookbook" feature where I can save our favorite recipes for easy access the next time we need it. In the last year, they have also added the "send to cellphone" feature, saves on printing costs!

My #2 favorite site is SparkRecipes. SparkRecipes has lots of healthy cooking recipes. The recipes are listed by the users of the site and I have found some awesome recipes for Weight Watchers and Biggest Loser on the site. Some features of this site that I like are: Cookbook: save your favorites from the site for easy access, Share: share the recipe with friends or yourself via email, Facebook, Twitter and more. Recipe Calculator: Input ingredients from a recipe and it calculates the nutritional value of the recipe.

A couple more recipe sites that are "community based" sites and have lots of "made from scratch, like your grandma used to make" type of recipes are Tasty Kitchen and Tammy's Recipes.  Tasty Kitchen is a recipe community by the famous blogger,  Pioneer Woman. A "community based" recipe site is one where the recipes are posted by the members of the site. Members post recipes, you can "friend" other members, so when they post recipes you can get notifications and more. You are able to save favorite recipes into a "recipe box". Both of these sites are FREE to join!

I have a couple of favorite "tools" for recipes and menu planning.

First of all: Every weekend I plan a menu for the coming week using many of the sites listed above and based upon what I know my family likes. I use a word document so I can print it out and put it on the fridge for a daily reminder for the whole family and "no questions asked" about upcoming meals. Here is the document I created and use, which can be downloaded to your computer and can be edited weekly: Blank Weekly Menu Plan  Each Monday I upload my filled in Menu Plan on my blog as part of Menu Plan Monday. Very easy and simple and "old fashioned". I love it!!

ZipList is another great tool I use. Ziplist
is an FREE online Grocery store list maker/manager. It is also a menu planner and an online recipe box. There are over 300,000 recipes at Ziplist that you can search and add to your menu. It will then allow you to add the ingredients from the selected recipe to your grocery list. Once your grocery list is created you can share it with family members so they can add to it if needed. You can also send your list to your cell phone or a family members cell phone for them to do the shopping and of course it is printable. The best thing is that it is printable from any computer anywhere! They also now have "Apps" for iPhone and Android Phones.

Lastly, another favorite site of mine is My Grocery Deals. My Grocery Deals allows me to view and compare the advertised sales at my favorite local grocery stores, print my shopping list, print coupons, and much more. It is FREE to join and I love using it!!

Menu planning and Grocery shopping planning really help our family stay on track, not only with our budget but eating properly.  I usually do all my shopping for the week on one day, go alone and have a weekly budget of about $80. I am able to stay within that budget each week with the help of these recipe sites and tools! It is a wonderful thing for our family!!
